SWEET POTATO & BLACK BEAN TACOS.

Tacos are so great.

Lets talk about this for a second.

Tacos are one of the only foods that can literally adapt to any craving, from any person, at any time.

For instance, the shell. It can be soft or crunchy, corn or flour, it can even be lettuce or chocolate! Then you get to stuff the shell of your choosing with anything your heart desires. Fish? Beef? Chicken? Eggs? Veggies? Cheese? Bacon? Ice Cream? Just put it in a taco.

Tacos might actually be the perfect food. YES. I think so.

In celebration of this, I want to share with you one of the tastiest taco combos I’ve ever eaten.

Sweet potato and black beans! Its no secret that I’m a sucker for this particular sweet and savory pairing. I probably make this chili at least once a month. So I thought, hmmm why not wrap it in a taco!

So, here it is. Stuffed inside a warm whole wheat tortilla. Topped with smokey, spicy chipotle lime crema, feta, and fresh cilantro!

SWEET POTATO & BLACK BEAN TACOS

serves 4-6

tacos:

1 tablespoon olive oil

1 small red onion, diced

2 medium sweet potatoes, diced into bite sized cubes

1 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon cumin

1/4 teaspoon chili powder

salt & pepper

1 15 ounce can of black beans, drained

chipotle lime crema:

1/4 cup greek yogurt

1/2 cup half and half

2 teaspoons adobo sauce (from a can of chipotles in adobo)

juice of half a lime

zest of half a lime

salt & pepper

***soft whole wheat tortillas, chopped cilantro, feta cheese

For the tacos: In a large skillet, heat olive oil over medium heat. Add onions and sweet potatoes, stirring to combine. Next add garlic, paprika, cumin, chili powder, and salt and pepper. Cover and cook for 15-20 minutes, until sweet potatoes are cooked through and are tender when poked with a fork.

Now, stir in the black beans. Cover and cook for 5 more minutes until everything is warmed through.

For the chipotle lime crema: While potatoes are cooking, whisk together yogurt and half and half. Add adobo sauce, lime juice, and zest. Season with salt & pepper. Whisk again until smooth.

Assemble your taco mixture on soft tortillas and top with chipotle lime crema, chopped cilantro, and feta cheese. Devour that deliciousness!
